BOILED AND BUBBLY

La Bettolina, a restaurant located in Gaggiano - 15 km from Milan, in a small corner of paradise surrounded by the greenery of a 16th-century farmhouse, dedicates the month of February to the discovery of the most prestigious Italian wine appellations, through Bollito e Bollicine, four tasting evenings that will tell the story and excellence of our bubbles. The scheduled dates are Feb. 4, 11, 18 and 25, 2025, from 8:30 p.m., and each event will have a different wine production area as its theme. The menu will include Welcome from the Cascina with homemade pan brioche crostini, whipped liver pate, Clerici beekeeping lime honey and fried sage. For the first course, tortellini in capon broth with crispy parmesan waffles. The second course is the real star: boiled meat from La Bettolina served in the dining room, with cotechino, tongue, cappello del prete, capon and biancostato. Accompanied by: green sauce, mustard, honey mustard and sharing side dishes. For dessert, small cheese tasting (goat, Vallée, Stravecchio Pedretti and Airoli spicy gorgonzola) and sorbet. The cost is 60 euros including water, cover charge and three glasses selected by Enoteca Maggiolini, partner of the events.
It begins on Feb. 4 with Alta Langa DOCG, a territory that stretches between the provinces of Asti, Alessandria and Cuneo, where in 1865 the F.lli Gancia winery created Italy's first classic method sparkling wine. During the evening it will be possible to taste Alta Langa DOCG, made exclusively from Pinot noir and/or Chardonnay grapes with a minimum percentage of 90% and aging on the lees for at least 30 months.
